Halvar Ellingsen
Halvar had worked at several of Norway's best restaurants. Bagatelle. Head chef at Palace Grill. Sous chef at Ylajali and Arakataka. He had been Norwegian champion and been on the national culinary team. Now he wanted to do something different. Build something from scratch. Kvitnes Farm had everything Halvar needed. With an ambitious farm owner in Helge Mørck, an uncompromising approach could be facilitated.
Born and raised in a family that harvested, butchered and fished, Halvar has learned to see the potential in raw materials that are overlooked and not used. His deep respect for what grows around us is the foundation of Kvitnes' philosophy.
